6-course "Venetian Sensation" tasting menu on January 27, 2016 by the chef of the amazing St.Regis in Venice


Only on the 27th this month you will have the chance to taste a unique menu cooked by world class chef here in Sofia.

We have Chef Roberto dal Seno visiting our Academy this month, when he will cook a unique Venetian menu at Talents Restaurant.

Chef Dal Seno has extensive international experience including Paris and Tokyo, at the moment he is the Executive Chef of St. Regis in Venice. This is not his first time in Bulgaria, as he was visiting HRC Academy as a guest lecturer before, but for the first time he will cook a special menu for the local food lovers. If you happen to be in Sofia on the 27th, make sure to book a table and enjoy one of a kind gastronomic experience.

“Venetian Sensation” 


Winter Garden:

Combination of smoked, caramelized and hot coals veggies, mozzarella foam and crunchy ground 


A Forest tale: 

Low Temperature poached egg, Parmesan foam, Prosciutto crispy powder


Mediterranean journey:

Ravioli filled with smoked eggplants, burrata cheese and raw tomato sauce 



Basil sorbet & candy lemon 


Venetian Farm:

Lamb loin in coffee bean crust, sweet & sour onion, carrots puree, polenta waffle


Cappuccino Tribute: 

Vanilla foam, cinnamon ice cream, coffee gelatin e cookies
