An open robata grill sits at the heart of the kitchen. Most plates pass over flame.

Trimmings become stocks, ferments and garnishes. The whole ingredient earns its place.

If a course doesn't make you grin or argue, it doesn't leave the pass.

The Venue

A dining room that doesn't sit still

Forty covers, an open pass, a wraparound view.

The room is built for theatre — the kitchen is the stage, and dinner runs like a set. The view changes with the light, from late afternoon gold to deep city blue.

A private mezzanine seats twelve for chef's-table service; the terrace opens in summer for cocktails before the sun drops behind Vitosha.
